This silky smooth creme of zucchini soup is a classic during the colder months. It is perfect as comfort food or for a light lunch.

vegetable broth

( 500 ml )
soy milk

salt & pepper
infused oil
Instructions
Sweat the oignon and garlic together in a bit of vegetable oil or broth.
Add potatoes, zucchini and broth, and cook until tender, which is about 30 minutes.
Add soy milk and nutmeg, and blend until smooth. Season to taste.
Dose individually and serve.
