Super Moist Banana Nut Bread

This deliciously moist cannabis-infused banana nut bread is my go-to for snacking on the go.

This recipe is awesome because it is vegan, easy to follow, and only requires one bowl. It is also very flavourful and perfectly soft, exactly like the ones you get at cafés.

Here are some of the reasons why I keep making this recipe again, and again, and again….. and again ( OK, I think you get the point).

  • Incredible even after being frozen
  • 1-bowl recipe ( because who like to do dishes?, not me)

Slice of Life

Pre-vegan, banana nut bread was the only thing that I would always get when I was in coffee shops. I loved them for their flavor and the fact that they were always moist, compared to other pastries who would end up dry AF.

But when I went vegan, it was almost impossible to find a good banana nut bread I liked. I also tried multiple vegan recipes, but none passed the banana bread lover test.

After a dozen of recipes tested, I finally gave up on existing recipes and decided to simply make my own by betterfying – yes it’s a word in my dictionary – a non-vegan recipe,  and let me tell you, this recipe is a game-changer.

Spice up your canna-banana bread

Here are some ideas of nuts and other variations to spice up this delicious banana nut bread:

  • Cashews ( what I used in this recipe)
  • Hazelnuts
  • Brazil nuts
  • Macadamia
  • Coconut flakes
  • Cacao Nibs

I also like to put half the batter in a 10 x 5 in loaf pan , sprinkle some cinnamon sugar, cover with the rest of the batter and finish it off with the last layer of cinnamon sugar on top. You could also swirl the batter with some of your favorite nut butter – Hello peanut butter!

Super Moist Vegan Canna-Banana Nut Bread

The one banana bread to rule them all.

Total Time 1 hour 10 minutes
Servings 9 1-inch slices

Ingredients

Wet

  • 4 medium bananas
  • 14 g (2 tbsp) ground flax seed
  • 125 g (1/2 cup) of soy milk
  • 1 tsp vinegar
  • 1 splash of vanilla
  • 110g (1/2 cup) Combination of vegetable oil and cannabis-infused oil  depending on your potency preference
  • 200g (1 cup) white sugar

Dry

  • 190 g (1 1/2 cup) all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 60 g (1/2 cup) of pecans , or your favourite nuts

Instructions

  • Preheat your oven at 350F (or 175C).
  • Mash the bananas with a fork.
  • Add the the ground flax seeds, soy milk, vinegar, and vanilla. Stir and let the mixture rest for 3 to 5 minutes.
  • Add the rest of the wet ingredients and stir
  • Add the dry ingredients to the wet ingredients and stir until everything is incorporated.
  • Transfer the batter into a 10×5 inch loaf pan and cook for 60 minutes, or until a toothpick inserted into the center of the banana loaf comes out clean.
  • Let it cool completely and slice into 1-inch thick slices.
  • Enjoy

Notes

I like to dose my edibles at aproximatly 10 mg of THC per slices. Adjust the potency of your edibles by using a mixture of cannabis-infused oil and regular vegetable oil.

Sensitivity to changes in oil: Yes

Type of oil or infusion:  Vegetable oil, but you could also use canna-milk.

Dosing method: batch

Taste: light, this recipe doesn’t taste at all like cannabis.

This is my personal perception when made this recipe at a potency of around 30 mg per portions.

Strength potential: medium-high

Sober version:  replace with regular vegetable oil

Always clearly label your edibles, keep them out of reach of children and pets, and don’t eat more than you can handle.

    Hi! I understand that creating cannaoil leaves a danky smell in the kitchen, but if you already have your cannaoil prepared, will you smell it through the bread baking process as well?

      I never smell canna oil when I bake with it. It is really just when you make the oil so you should be fine! 🙂

    Can I use unsweetened vanilla flavored almond milk? I use the blue diamond Brand also would coconut milk in the can be an option?

      Yes, you can use your favorite plant-based milk. The only thing is that if you decide to use canned coconut milk, you will taste the coconut flavor in the bread.

    Can i use pre bought 2000 mg cannabutter instead of cannaoil?

      Yes. You can follow the recipe and simply melt the cannabutter before using it.

    So easy, moist, delicious, and did I say easy! I added walnuts, sprinkled home-made cinnamon sugar on top. Oh boy, I have to remind myself it’s medicinal. I need to bake this with just plain veggie oil. Thank you for a fantastic, fool proof recipe.
